It’s pretty simple, but the steps are different if you're a new giffgaff member, or an existing one.

If you’re already a giffgaff member, you can switch from your current SIM to a new eSIM by following these steps:
Check if your phone works with eSIM
Then, on the giffgaff app (you will need to download the app in order to migrate over to an eSIM), head to Account > SIM > Replace my SIM > Switch to a new eSIM
Follow the steps there and you'll be up and running with an eSIM in no time
When switching from a physical SIM or an existing eSIM to a new eSIM, here are a few handy tips to remember:
Check that you’re on the latest version of the giffgaff app
It can take up to 1 hour after activating your eSIM to get signal but can go up to 24 hours at busy times
You can only switch to an eSIM between 4:30am to 9:30pm
Avoid switching to a eSIM when traveling
If you still don’t have signal after 1 hour, restart your phone or switch flight mode on and off again for a soft reset
Remember that your old SIM will stop working once you’ve switched, so it’s important to remove the old SIM card if it was physical, or delete the old eSIM from your device to avoid your phone system getting confused

Next, download the giffgaff app and register for an account or log in
On the app dashboard, toggle to the eSIM option then go to Choose your plan
After choosing and purchasing a plan, you’ll be able to get an eSIM on giffgaff

Remember, there are no differences in pricing between a plan on a physical SIM and a plan on an eSIM.
