'Always On' means you never run out of data. You get a set amount of blazingly fast 4G and 5G data, then a reduced data speed of 384 kbps from 8am to midnight.

You may notice that activities which require high amounts of data, like HD video streaming, will be slower if you go over the full speed cap.
If you do go over the full speed cap and need some faster data, you can start your next plan early.
