A passkey is a secure way to sign in using your fingerprint, face or screen lock. It replaces passwords so you can log in quickly and safely.
Passkeys are tremendously secure, because they’re magically generated for every account by your own mobile phone and are less vulnerable to phishing.
You can manage your passkey in your device's Settings app:

Can I still log in without a passkey?
Yes, you can. Passkeys are optional. You can always log in with your password, even if you've set up a passkey.
Can I use passkeys on more than one device?
Yes, you can use them on other devices if the place where your passkey is stored is shared across those devices.
If not, you can set up a new passkey on any other device you use.
What happens if you get a new mobile phone?
If your passkey is synced to your Apple or Android account, it may carry over to a new device.
If not, then you'll need to set up a snazzy new passkey. You can do this by logging in with your password on your new device, then create a new passkey when prompted.
Nice one.
