eSIM is still fairly new so only more recent phones will work with it. It needs to be built into the phone in the factory. It's not as simple as a software update.
Most modern smartphones with built-in eSIM support are compatible with giffgaff eSIM.
To use a giffgaff eSIM, your device must:
support eSIM,
be network unlocked,
and be able to run the latest version of the giffgaff app.
Examples of compatible devices include:
iPhone XS or later

This is not a complete list. Many newer eSIM-enabled phones will also work.

eSIM compatibility for other devices
iPad: eSIM is still fairly new so only more recent iPads will work with it. It’s a hardware feature built into the newer iPad models during production (not something you can add later). Smartwatches: Wearables, like smart watches, can use eSIM technology but they also depend on other network components that we haven’t quite got going yet.
While we haven’t got an exact timeframe for introducing support for these wearables, you can keep an eye out on the community for any updates.
